dieta, pudiendo llegar a variar en un rango de tres unidades porcentuales. La nutrici\u00f3n y el manejo alimentario son los factores ambientales m\u00e1s importante que afectan a la grasa de la leche y son unas herramientas que se pueden usar para alterar la composici\u00f3n en \u00e1cidos grasos de la leche.<\/p>\n<p>La grasa l\u00e1ctea est\u00e1 compuesta por una compleja mezcla de l\u00edpidos, aunque un 97% de estos son triglic\u00e9ridos. Estos l\u00edpidos son sintetizados a partir de \u201cprecursores\u201d procedentes de la circulaci\u00f3n perif\u00e9rica (60%) o sintetizados \u201cde novo\u201d en la gl\u00e1ndula mamaria (40%). Los \u00e1cidos grasos con longitud de cadena de 4 a 14 carbonos, y una porci\u00f3n de los de 16 carbonos proceden de s\u00edntesis de novo en la gl\u00e1ndula mamaria a partir de acetato y en menor proporci\u00f3n de betahidroxi-butirato. El resto de los \u00e1cidos grasos de 16 carbonos, y todos los de 18 carbonos y de cadenas m\u00e1s largas derivan de \u00e1cidos grasos circulantes, procedentes de la absorci\u00f3n de l\u00edpidos de la dieta o de la movilizaci\u00f3n de grasa corporal.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section
