Se denomina com\u00fanmente \u201cheno sano\u201d, principalmente debido a su contenido en taninos condensados (TC), los cuales inhiben la degradaci\u00f3n de las prote\u00ednas en el rumen y, por tanto, minimizan la incidencia de timpanismo ruminal. Adem\u00e1s, la esparceta posee propiedades antihelm\u00ednticas contras par\u00e1sitos intestinales.<\/p>\n<p>Durante los \u00faltimos a\u00f1os se ha renovado el inter\u00e9s en este cultivo debido a que la presencia de TC en el forraje tiene efectos positivos en la reducci\u00f3n de las emisiones de nitr\u00f3geno amoniacal y de <a href=\"https:\/\/dellait.com\/es\/es-posible-disminuir-la-emision-de-gases-de-efecto-invernadero-incrementando-la-longevidad-de-las-vacas-lecheras\/\" target=\"_blank\" rel=\"noopener noreferrer\">metano ent\u00e9rico en los rumiantes<\/a>.<\/p>\n<p>Investigadores del Centro de Investigaci\u00f3n y Tecnolog\u00eda Agroalimentaria de Arag\u00f3n (Zaragoza, Espa\u00f1a) evaluaron los efectos del m\u00e9todo de conservaci\u00f3n (heno o ensilado) de la esparceta sobre la composici\u00f3n nutritiva y el contenido en TC del forraje. La esparceta (variedad Reznos) se sembr\u00f3 en oto\u00f1o de 2013 en un terreno franco-limoso con un \u00edndice de siembra de 100 kg\/ha. No se aplic\u00f3 ning\u00fan fertilizante. El forraje se cosech\u00f3 manualmente en mayo de 2015 en la etapa de floraci\u00f3n tard\u00eda. Los forrajes conservados mostraron menor contenido en prote\u00edna y mayor contenido en fibra que el forraje fresco.<\/li>\n<li>Al comparar con el forraje fresco, el henificado solamente afect\u00f3 a la concentraci\u00f3n de TC ligados a fibra (2.3 vs. 1.8 eq-g TC\/kg MS en el forraje fresco).<\/li>\n<li>Sin embargo, el ensilado de esparceta disminuy\u00f3 el contenido de polifenoles totales (34.1 vs. 44.6 eq-g \u00e1cido t\u00e1nico\/kg MS en el forraje fresco), TC totales (33.2 vs. 38.6 eq-g TC\/kg MS) y TC extra\u00edbles (8.2 vs. 31.6) e increment\u00f3 los TC ligados a prote\u00edna (17.0 vs. 5.3) y ligados a fibra (7.9 vs. 1.8). Durante el proceso de ensilado, las reacciones entre compuestos polifen\u00f3licos y otras mol\u00e9culas de las plantas aumentan los enlaces entre los TC y prote\u00ednas y\/o fibra.<\/li>\n<\/ul>\n<p>En conclusi\u00f3n, el contenido en polifenoles y taninos condensados se vio m\u00e1s afectado por el proceso de ensilado que por el proceso de henificado.
